Backyard Birds & Coffee started from feeding the birds at home in 2014 . From there the passion grew to opening a birding supply store along with a coffee shop including hand-dipped ice cream. Reservations Recommened! About the Executive Chef: Ashleigh Fleming I had the fortune — or as my dad says, “the unfortunate pleasure” — of growing up in a hospitality centered family. My father always managed and owned restaurants as I was growing up and my mom is a luxury hotel and high-rise manager. My grandmother was the world’s greatest entertainer and parties and holidays were the absolute best with no missed detail at her house! With her four daughters and a few chefs in the family and plenty of us running around, it was always amazing to me that when my grandmother put food on the table, no matter what Southern drama was occurring or what was happening, everyone was happy and the worries of the day were gone. I fell in love with the hustle and the movement of the kitchen, and the noise of service, and the dance of hospitality at a young age. When my friends were out playing on the weekends, my brother and I were counting burned-out lightbulbs and crooked pictures with my mom at the hotel or counting inventory with my dad – which sometimes included terribly scary fish to a kid, like a monkfish! But my favorite was to count the lobsters while they were still in the tanks. I did the servers side work when I was in elementary school, progressed through the ranks of washing dishes and serving by high school, and eventually managing a restaurant at the age of 18. My genuine love of food and an appreciation for the communal pleasures of dining drew me into the profession and I have never looked back. Alongside my love of cooking, I’ve always been determined to never stop learning and I always strive to be better and to progress. I supplemented my early years in the restaurant and my grandmother’s kitchen with the best in training and certification by attending and graduating from The Culinary Institute of America in Hyde Park, New York. My journey has taken me through some of the best clubs and restaurants; River Oaks Country Club and The Briar Club in Texas; Congressional Country Club and Army Navy Country Club in Maryland; and in various areas of North Carolina including three years as the Executive Chef of The Carolina Club at UNC in Chapel Hill. Most recently, I opened a restaurant in Apex centered around local growers and seasonal provisions. Nothing could have prepared me more than training under Certified Master Chef Ken Arnone who has achieved the highest level of certification in the craft and is only one of 71 Certified Master Chefs in the United States as well as a Global Master Chef. He has mentored me every step of the way. Both he along with Chef Russell Scott, whom I interned with, have encouraged me to strive for excellence and find my own personal niche. My culinary style reflects my home of Texas influenced by the culture and style of my experiences and surroundings. I love local flavors blended with modern techniques. My flavor driven background has made for a unique approach. About Daphne: Daphne loved Littleton, her church, her many friends, and the simplicity of living in a small town where everyone knew each other, and your neighbors were considered family. Whenever anyone needed a helping hand Daphne was always there to help. She loved her morning coffee, reading scripture, and enjoying the day’s lesson in her Methodist Upper Room Booklet. Daphne was a gifted artist, professionally trained, and accomplished. Her artistic talent was highly respected and her portraits were sought after by everyone in town; throughout her life in Littleton, she painted 75 portraits of residents and she was especially fond of children who would sit patiently after school posing while their mom observed Daphne’s work with pride. Daphne stopped painting when she turned seventy-five and spent her time on her other passion, acting, where she especially loved to be cast and play male roles. Daphne was a devoted mother and an even greater grandmother; each year her grandchildren would countdown to summer when they got to spend a few weeks with Mema. Daphne passed away in 1999 at the young age of 87. Daphne’s Coffee Shop represents the kindness and love Daphne had for the Littleton community and how much she enjoyed her coffee. Her early artwork adorns the walls of the coffee shop and when you come in for a great cup of coffee, you’ll always be under the watchful and loving eyes of Daphne
